DAIRY FREE SUGAR COOKIES


I was tasked with pulling off some dairy-free sugar cookies for a children's Christmas party I was throwing. I was so happy to create this recipe and have it come out beautifully it is really easy and delicious. sure to be a hit with any dairy free cookie lovers! 

Ingredients:

1 cup vegetable shortening 
1 cup white sugar
1 egg
2 teaspoons vanilla
4 tablespoons soy milk ( you can use your favorite milk substitute here)
3 cups flour 
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Makes 2 dozen 3 inch cookies 

Directions:

Preheat oven to 375° and line baking sheet with parchment paper.



Cream together vegetable shortening and sugar, add egg and mix well, then mix in vanilla and soy milk. It should look light and fluffy. In a separate bowl combine flour, baking powder, and salt. 


Gradually combine the dry ingredients into the wet. Wrap dough in plastic wrap once you have it nicely combined and place in the refrigerator for one hour. 


Once it is chilled seperate 1/3 and place remainder in the fridge so each batch is nicely chilled.  Then you can roll it out on a lightly floured surface and cut out your favourite shapes. *Be sure to dip your cookie cutters in flour for easy shape removal* please cut out shapes on to your parchment paper and into the oven for 8 to 10 minutes. You'll want to be sure that all of your shapes are the same size if they aren't they will have different cooking time so please be careful. When they are golden brown on the bottom remove them onto a wire rack to cool, and then decorate as you choose! 


**Note on some batches of this the dough was a little bit dry and would even crack if you're having this issue you just need to add more soy milk or whatever milk alternative you have chosen**
